To make this corn and cucumber salad with chicken, you need the following items:
- Pasta - I use penne for this salad recipe. Choose gluten-free pasta for gluten gluten-free options. A base ingredient that provides the perfect balance of carbs and texture.
- Chicken - Boneless chicken breast without skin. A protein-packed addition that makes the salad hearty and satisfying. Choose cheese, chickpeas, tofu, etc., for plant-based protein sources.
- Corn - Frozen Sweetcorn kernels. A touch of sweetness enhances the overall flavor profile.
- Spinach - Fresh baby spinach leaves add a vibrant color.
- Cucumber- Brings a refreshing crunch to the dish and complements well with other ingredients.

How to make chicken sweetcorn pasta salad?
Cook the pasta, chicken, and corn together
Bring a pot of water to a boil with a pinch of salt and a teaspoon of oil. Stir in the pasta and cook for 5-8 minutes. Add the chicken slices to the pot and cook for another 8-10 minutes. When the pasta and chicken are nearly cooked, add the frozen corn kernels and cook for another 5 minutes.
Strain the pasta, chicken, and corn. Pour cold water over it to cool down every item. Keep it in the fridge.
Make homemade Greek yogurt - Optional step!
Pour the plain yogurt into the strainer for half an hour to separate the whey from the yogurt for a thicker, creamier consistency of yogurt. This is what we call- Greek Yogurt.
Omit this step if you want to use store-bought Greek yogurt.
Combine the Ingredients
In a large mixing bowl, combine all the dressing ingredients (mayonnaise, greek yogurt, seasonings). Stir in cold pasta, corn, and chicken followed by spinach and cucumber.

Chicken and Sweetcorn Pasta Salad
Ingredients
- 1 Cup Pasta
- 220 g Chicken breast without skin
- ¼ cup Corn Kernels frozen
- ¼ cup Baby spinach
- 1 Cucumber
- ½ cup Mayonnaise fat-free
- ¼ cup Greek yogurt
- 1 tablespoon Italian dressing
- 1 teaspoon Black pepper
- 1 teaspoon Salt
Instructions
- Boil the chicken, pasta in water with salt and oil for 8-10 minutes. Stir in frozen corn kernels and cook for another 5 minutes.
- Strain the pasta with chicken and corn. Pour cold water over it to chill the pasta. Keep it in the fridge to chill.
- OPTIONAL- Make your own greek yogurt by straining the creamy yogurt for half an hour. Or, just use store-bought Greek yogurt.
- In a mixing bowl, combine mayonnaise, Greek yogurt, salt (if req), black pepper and Italian dressing. Mix it well.
- Stir in cooked pasta, sweetcorns, chicken, baby spinach leaves, and cucumber.
- Give it a good mix to coat the dressing well with all the ingredients.
- Chill it. Serve and enjoy chilled chicken and sweetcorn pasta salad!
