To make rainbow stir-fry vegetable, you need the following items:
Cauliflower: ¼ - each floret cut into 2-3 pieces.
Carrot:1- Peeled and chopped into thin 1-inch long slices.
Bell Peper: 1 red and 1 yellow -cut into thin, long slices.
Corns: 1 cup - frozen corn kernels.
Pineapple: ¼ cup Canned.
Oil: 1 tablespoon.
Salt: 1 tablespoon.
Tomato ketchup: 1 teaspoon (optional).
Soy sauce: 2 teaspoons.
You are free to choose the veggies of your choice.

Step -1 Cook veggies
- Chop all the veggies into long thin slices.
- Steam cauliflower and carrot for 10 minutes or till these are partially cooked.
- Add red and yellow bell peppers to the steamer and steam them for 5 minutes.
- Remove from the steamer and allow to cool vegetables.
- Note; Bell pepper takes very little time to cook, so I add them in the last for 5 minutes only. The total time to steam the veggies is 15 minutes.
Step-2 Stir fry veggeis in the sauce
- To medium-hot skillet/pan, pour a tablespoon of cooking oil and stir in steamed veggies. Add salt and pepper as per your taste. Saute for 2 minutes.
- Add frozen corn kernels and saute further for a minute. Stir in pineapple slices. Next goes in tomato ketchup and soy sauce. (images 5-6)
Saute for 2 minutes. And that is it! Your low-carb vegan healthy stir-fry veggies recipe is ready!

Healthy Stir Fry Veggies Recipe
Equipment
- Pan/Skillet/Wok
- steamer
Ingredients
- ¼ cauliflower
- 1 carrot
- 1 bell pepper red
- 1 bell pepper yellow
- 1 cup frozen corn kernels
- ¼ cup canned pineapple
- 1 tablespoon oil
- 1 tablespoon salt
- 1 teaspoon pepper
- 1 teaspoon tomato ketchup
- 2 teaspoon soy sauce
Instructions
Chop the Veggies
- After thorough washing and rinsing, chop the vegetables into long thin slices except for cauliflower.
Steam the veggies
- Using a steamer, steam cauliflower and carrot for 10 minutes. Add bell peppers and steam for 5 minutes more.
- After 15 minutes, remove veggies from the steamer and cool them slightly.
Stir Fry Veggies
- Pour in oil into a pan, add steamed veggies. Add salt and pepper to them.
- Saute for 2 minutes, stir in corns stir fry and add pineapple slices.
- Pour in tomato ketchup and soy sauce.
- Simmer stir fry for 2-3 minutes.
- Healthy low-calorie stir veggies are ready to serve.
