Starbucks is a well-known American multinational chain of coffeehouses and roastery reserves. In March 2020, Starbucks introduced Iced Pineapple Matcha as a healthy plant-based, vegan, and dairy-free option for coffee lovers with some dietary restrictions. Soon, it became an internet sensation due to its unique and refreshing flavor.
This delicious Starbucks Pineapple Matcha Drink is prepared with matcha green tea, pineapple, ginger, coconut milk, and ice that soothes in hot thrilling weather. It is a light, refreshing, and energizing drink that uplifts your day.
For the Iced Pineapple Matcha, Starbucks uses pineapple ginger syrup. But, in this recipe, I use canned pineapple juice, sugar, and freshly grated ginger to make homemade pineapple ginger syrup. The outcome is the same flavors as that of Starbucks.
You might have already tried this pineapple matcha drink till now. If you are a die-hard fan of this matcha drink, one of the most admired Starbucks drinks, this post is perfect for you!
What is matcha?
Matcha is a Japanese bright green tea powder packed with antioxidants. It is a finely ground powder made from specially grown and processed green tea leaves. In Japan, people use matcha to conduct tea ceremonies.
It is no longer limited to Japan only. Nowadays, it is widely used in a variety of food and drink recipes all over the globe.
Is matcha simply regular green tea crushed into a fine powder?
The answer is no, as matcha differs from green tea in terms of color and flavor. Matcha is more vibrant, bright green, and sweet with a slightly astringent taste, whereas green tea is yellow-brown with a bitter taste. This is due to differences in the cultivation and grinding techniques used to prepare these powders.
Matcha falls under two different grades, ceremonial and culinary:
Ceremonial grade is the highest quality and most expensive matcha powder available. It is used for traditional tea ceremonies. It must be served as purely as possible because of its delicate flavor.
Culinary grade is harvested from slightly older leaves than ceremonial grade matcha. Because of its strong flavor, it can be used for cooking, baking, mixing, etc.,
Ingredients
To prepare this refreshing vegan summer drink, we need the following items:
Pineapple ginger syrup:
We need only 2 tablespoons per drink, so prepare accordingly or you can store the rest of the syrup after use in the fridge.
- Pineapple juice: ¼ cup - I prefer unsweetened pineapple juice.
- Sugar: ¼ cup
- Ginger -1 inch - peeled and grated.
- Water - ¼ cup
Pineapple matcha drink:
- Pineapple-ginger syrup: 2 tablespoons
- Pineapple juice:¼cup
- Matcha green tea powder: 2 teaspoons (2g) ceremonial grade matcha.
It is high-quality green tea leaves that result in a delicious drink full of powerful health benefits. - Coconut milk: ¾ cup - I prefer the unsweetened version.
- Ice cubes: Handful.

This recipe is so easy to prepare. It hardly takes 5 minutes to prepare this drink if you have readymade pineapple ginger syrup. Otherwise, it takes 10 -12 minutes to make this drink as we need to make syrup first.
Let's start in detail:
Step-1 Prepare pineapple ginger syrup
Combine sugar, pineapple juice, water, and grated ginger in a bowl as shown in images 1-3.

Microwave it for 1 minute or until the mixture starts boiling. Stir well and let it cool for 8-10 minutes.
Strain out the ginger, and use the syrup as required.
Store the left-out ginger pineapple syrup in the fridge and can be used for up to one week. This syrup recipe calls for ⅓ cup of ginger pineapple syrup as we need only two tablespoons per drink.
Step-2 Prepare pineapple matcha drink
All you need; is a glass and combine all the ingredients to make this matcha drink. And, here you go.
Add matcha powder and pineapple juice to a glass.
Agitate on this matcha to combine well (Image below).
Add a handful of ice to a glass (Image below).
Pour in pineapple ginger syrup.
Pour in coconut milk (image below).
Stir well to combine all the ingredients (image below).

Is pineapple matcha a healthy drink?
Yes, this is no doubt about it. Prepared with matcha, coconut milk, and pineapple are all very healthy ingredients! And, even safe for dairy and lactose dietary restrictions.
The only thing that needs to be considered is the caffeine and sugar content. As matcha contains caffeine so does this drink! Generally, a cup of matcha made with one teaspoon of matcha powder contains 70 milligrams of caffeine. So be aware of this if you are avoiding caffeine for any reason.
If you are looking for healthier options, replace sugar with natural sugar sources like stevia, honey, maple syrup, etc.,
Matcha tea improves health in many ways ranging from enhancing weight loss to decreasing the risk of heart disease. Some studies show that matcha tea may improve mood and performance.
Adaptations
Looking for some variations? Check out the following options you may try:
- The drink will taste better if you replace pineapple juice with fresh pineapple. But, remember, you need to put in the extra effort.
- Use sweetened coconut milk or add more syrup if you like your matcha on the sweeter side.
- Try substituting coconut milk with heavy cream for a creamier version, yet not a healthy choice.
Tips
- Using ginger juice or ginger powder (if you have it in your pantry) will save you effort and time.
- If you use pineapple chunks, use more fruit to get the juice equivalent to the mentioned quantity.
- Coconut milk is high in calories. To make a lighter version of pineapple matcha, add more pineapple juice and less coconut milk, or add half of the coconut milk and half of the water.
- Always store pineapple ginger syrup in the fridge and can be used for up to one week.
- Make pineapple ginger syrup in bulk. Whenever you want to uplift yourself, combine all the ingredients and be ready with the drink.

Ingredients
Pineapple Ginger Syrup
