What is 3C Soup?
3C Soup is a super-healthy vegetarian soup recipe prepared with 3C vegetables, i.e. Cabbage, Carrot and Corn kernel, using homemade stock. This vegan vegetable soup is so yummy and flavourful that you can eat it as a starter or snack at any time of the day.
The veggies in this soup are low in calories, low in carbohydrates and full of nutrients that aid in weight loss. This 3c soup is a perfect choice if you are making efforts to lose weight as it fills your tummy for a long because of the fibre and water content of the veggies and thus reduces subsequent hunger.

What goes in 3C soup?
For preparing this quick and easy cabbage carrot corn soup recipe, you require the following ingredients:
- Cabbage - Green cabbage. Thoroughly wash it in warm water with salt added to it. Grate or chop whatever suits you.
- Carrot - Grated- I use an orange carrot as this is the only variety available at my place. Use any.
- Corn - I prefer to use frozen corn kernels because of ease. It makes this soup super yummy with its crunchiness.
- Onion and garlic - Add flavour.
- Cilantro - Use fresh coriander leaves for garnishing. (optional)
- Oil - Olive oil or any cooking oil will work best.
- Lemon juice - It offers sourness.
- Salt- I use table salt and black salt to give this recipe a unique taste.
- Pepper- For the spicy quotient.
- Oregano - make it more appealing.
- Water- As much as you want to prepare the stock.

Let's get started on how to make cabbage carrot corn soup with homemade stock
Step-1 Prepare stock
- Soak the cabbage in warm water with salt added to it for 10 minutes to remove any impurities. Peel off and discard the outer cabbage leaves. I also prefer peeling off the carrot.
- Grate cabbage and carrot using a grater. You can also chop it. Do whatever is comfortable for you. I like grating veggies as in this way these cook faster, and also, veggies are easier to eat in the soup.
- Add cabbage, carrot and corn kernels, salt, red chilli powder and water into a pan. Cover with a lid and cook for 12-15 minutes on low heat. (picture below)
- When veggies are cooked, strain them, and homemade stock full of nutrition is ready. Save this stock for the next step for the soup. (image below)
Step-2 Prepare soup
- Add oil to a medium-hot pan, and cook chopped garlic and onions.
- Once onions and garlic are softened, add cooked veggies and saute for the next 5 minutes.
- Pour in salt, lemon juice, oregano, and stock (prepared above), and simmer for 8-10 minutes. (pic below)
- Garnish with chopped cilantro leaves. (pic below)

Variations
If looking for some adaptions, try these and let me know how it goes:
- Spicy - Add green chillies while cooking to imbue heat into the recipe.
- Tomatoes - Use tomatoes for extra tanginess.
- Green onions - Replace regular onions with green onions or other pungent relatives, including leeks, shallots, and chives.
- Garnish - Sprinkle mixed seeds, chives, or chopped parsley.
- Butter - Use butter instead of oil if not for weight loss purposes for rich flavour.
- Cheese - Top up a little cheese to make it more tempting.
- Chickpeas - Combine boiled chickpeas for complete protein.
Storage
- Store this 3C veggies soup in the fridge.
- It stays good for 2-3 days.
- Reheat before serving.
Tips
- Wash the cabbage thoroughly and discard the outer leaf.
- Grating or chopping the veggies into small chunks helps in faster cooking.
- Avoid using an aluminium pan to prepare this cabbage carrot corn soup as it leads to a reaction that changes its colour and taste.

Ingredients
- 2 cup Cabbage grated
- ยฝ cup Carrot grated
- ยผ cup Corn kernels frozen
- 1 teaspoon Black salt
- 1 teaspoon Table salt
- 1 teaspoon Red chilli powder
- 3 cup Water
- 2 teaspoon Oil
- 2-3 cloves Garlic
- 1 Onion
- 1 tablespoon Lemon juice
- 1 teaspoon Oregano
- few Cilantro leaves fresh
Instructions
- Combine cabbage, carrot, corn kernels, salt, red chilli powder, and water into a pan. Cook for 10-15 min on low heat to cook veggies.
- Strain the veggies and save the stock.
- To a hot pan, add oil, cook garlic and onions.
- Stir in cooked veggetables. Add stock, salt if required, lemon juice, oregano, and simmmer for 10 minutes.
- Garnish with cilantro leaves.
- Serve hot.
