If you’re someone like me who doesn’t usually enjoy salad, you definitely need this salad to change your mind! I first had this salad at my friend’s place and instantly fell in love with this nutty salad because of the many obvious reasons!

It’s now one of my go-to recipes when I want something nourishing, fuss-free, and absolutely delicious. Want to add a spicy twist? A spoonful of my 2-ingredient chilli oil, or homemade Szechuan sauce on top, goes surprisingly well with this crunchy salad!

Ingredients

To make this easy vegetarian party salad, you need these items:

  1. Cucumber: Crisp and refreshing, cucumbers bring a cool, hydrating element with their high water content and mild, subtly sweet taste.
  2. Carrot: Sweet and earthy, carrot provides a bright pop of color and a crunchy texture. Healthy and flavorful, packed with beta-carotene and other essential nutrients.

How to make nutty crunchy vegetable salad?

You can find this easy, no-mayo salad recipe video below, but here is a quick overview of the procedure:

Prep the veggies

Wash and chop all vegetables into bite-sized pieces. Grate carrots for extra crunch and sweetness.

Mix it up

In a large mixing bowl, combine all chopped veggies, lettuce, nuts, seeds, and raisins. Drizzle with lemon juice and olive oil. Sprinkle salt and pepper to taste. Toss everything gently to combine.
