Ingredients in Chicken Sandwich Filling
Here’s what goes in this cold chicken sandwich recipe:
- Chicken- I use chicken thighs for this recipe. Boil it in water for about 10-15 minutes.
- Mayonnaise- Use whole egg mayonnaise for rich creamy sandwiches.
- Bread- Sandwich white bread. Feel free to use whatever is handy.
- Olives- I prefer stuffed olives for flavorful, yummy, and healthy sandwiches.
- Greens - In this simple chicken mayo sandwich recipe, I use lettuce to give them a crunchy and healthy twist.
- Salt - Table salt. Use minimal as mayo and olives are also salted.
- Pepper - Black pepper

How to make chicken sandwich with mayonnaise?

Step-1 Boil chicken
Pour chicken, salt, and water into the pan. Cover it with a lid and boil the chicken for 10-15 minutes or until you can easily prick the meat with a fork. Strain the chicken and store the stock in the fridge for other dishes.
Step-2 Chicken mayo filling preparation
Shred the chicken using forks or by hand. Cut olives and lettuce into small chunks. Combine all the ingredients except lettuce leaves in a bowl and mix well. Add 2-3 teaspoons of olives liquid to make this filling more tempting!
Step-3 Sandwiches assembly
To make high-tea finger sandwich style, cut the crust off sandwiches, otherwise, leave them on. Then, cut them in half on the diagonal. I prefer to cut the bread before filling to avoid wasting filling.
Spread the filling on the bread from edge to edge. Top up with lettuce leaves and serve delicious, crunchy cold chicken and mayonnaise sandwiches!
Variations
- If you prefer a hint of spice, add green chilies, chilli flakes, or spicy red chutney
- Instead of lettuce, you can use cucumber, carrot, avocado, spinach, tomatoes, etc.,
- Use gluten-free bread instead of white bread to make these chicken sandwiches with mayonnaise gluten-free.
- Layer the sandwich with green chutney after filling for another flavourful twist.
- You can also use equal amounts of mayonnaise and yogurt to make a creamy base.
Tips
- Use salt carefully, as mayonnaise and olives are already salty.
- The chicken thighs are juicier than chicken breast, so to get the best out of the recipe, use thighs.
- Cutting off the bread crust is optional. The purpose is to get soft and neat sandwich edges.
- Add salt while boiling the chicken to avoid its bland taste in the sandwiches.
- Shred the chicken finely or as chunky as you like.
- Add lettuce later to make the sandwiches crunchy for longer.
- Don't forget to add some spoons of olives liquid into the sandwich filling for extra seasoning.

Chicken Mayonnaise Sandwich
Ingredients
- 150 g Chicken thigh (1)
- 80 g Mayonnaise (¼ cup)
- 20 g Olives stuffed
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- ½ cup Lettuce
- 8 slices White bread
Instructions
- Boil the chicken in salted water for 10-15 minutes. Once it is cooled down, shred it.
- Cut olives and lettuce.
- Cut off the bread crust and then cut it diagonally.
- Prepare the filling by combining all the ingredients except lettuce.
- Spread the filling and top up with lettuce.
- Serve the cold chicken mayonnaise sandwiches!
