For the chicken drumsticks, I usually go with skinless ones, but use what works best for you.
Prepare the green onions by removing the roots, washing the stalks, and chopping both the white and green parts. They bring a unique taste to the recipe and make a great garnish too.

How to make curried chicken drumsticks
In a small mixing bowl, combine equal parts of soy sauce and tomato ketchup and set it aside to add in the last stage. This sauce will add flavor and color to the soupy drumsticks.

Heat a pan and add oil to it. Add chopped garlic and sauté it. Stir in green onions and fry them.

When the onions have turned translucent, add the chicken legs and sauté for 2 minutes over low heat. Sprinkle a pinch of salt and pepper.

Pour 2 cups of water, stir well, and cover with a lid. Cook on high heat, flipping the sides.

Once the chicken drumsticks are cooked, stir in the soy-tomato sauce and toss gently to mix well.

Bring to a simmer and cook until the sauce thickens; remove from the heat. For a spicy twist, you can drizzle 2-ingredient chili oil or stir in a bit of red chilli chutney just before removing from the heat.
Garnish with spring onions. Serve these curry chicken drumsticks with rice or bread.

Ingredients
- 330 g skinless chicken drumsticks (3 x 110g each)
- 2 green onions
- 4 cloves garlic
- 3 tablespoon soy sauce
- 3 tablespoon tomato ketchup
- 3 tablespoon oil
- 1 teaspoon salt
- 1 teaspoon Pepper
- 2 cups water
Instructions
- Prepare a sauce by combining equal parts of soy sauce and tomato ketchup in a small bowl and keep it aside.
- To a hot pan, add oil and chopped garlic. Stir fry until golden brown.
- Saute the green onions till they become translucent.
- Place the chicken legs in the pan. Fry it for a minute and stir in salt and pepper. Fry it for 2-3 minutes.
- Add water and cook by covering with a lid.
- Once the chicken is cooked, pour the soy-tomato sauce and mix well.
- Simmer for 3-5 mins on low heat.
- Turn off the heat when the sauce gets slightly thickened.
- Serve warm with bread naan, roti, and rice.
