These air fry carrots and potatoes are so delicious plus super healthy that you don’t need to compromise on the taste and flavour you want. It is an effortless way to make these veggies, as you can do other work while veggies are cooking in an air fryer.
Needless to say, this recipe works with any vegetable. These air fryer roasted potatoes and carrots are tender inside and super crispy outside. Adding lemon juice to the veggies boosts the flavour of other herbs that tastes amazing!! The air fryer is the best way to make veggies healthily when a food craving hits!!
Ingredients
To make these crunchy air fry potato and carrots, you need:
- Potatoes- Use any potatoes. I use Yukon gold potatoes for this recipe.
- Carrots- I have orange carrots available here in Australia, so I am using them. Use any.
- Seasoning - Oil, red chilli powder, Italian herbs, lemon Juice, and oil. I have used extra virgin olive oil to make these healthy air-fried potatoes and carrots.
- Cilantro- Optional. It is for garnishing.

How to cook potatoes and carrots in air fryer?

- Cut potatoes and carrots after thoroughly washing them. I have peeled them to avoid any soil particles if present. Cut them as you like. I cut them into small and thin slices, as shown in the image below.
- Combine vegetables and all the other ingredients in a large mixing bowl. Mix well (image below).
- Place these seasoned veggies in the air fryer. Set the temperature to 200°C for 20 minutes or until they are golden brown and crispy from the outside (image below).
- Garnish with fresh, finely chopped cilantro leaves. It is an optional step.
- Serve warm roasted air fried potatoes and carrots, and enjoy the healthy veggies!
Variations
- Add green chilies, schezwan sauce, or sriracha to make them spicy.
- Oven bake is the other alternative to an air fryer if you don’t have a choice for an air fryer.
- Add garlic powder to give them a garlicky flavour.
- Use a handful of roasted pine nuts/ peanuts/almonds/walnuts for additional crunchiness.
- Try other fresh herbs like parsley, mint, and rosemary for garnishing.
Equipment
I have air-fried carrots and potatoes in a Westinghouse oven with an air fryer for 20 minutes using a temperature of 200°C. Keep the veggies apart. If it is not possible, then flip the sides after some time to distribute the heat properly.
Use an air fryer you have, but watch out for cooking time.

- 450 g Potatoes
- 120 g Carrots
- 1 teaspoon Salt
- 1 teaspoon Chilli powder
