- Onion: I use white onions for this recipe. Use any.
- Spring onions: It gives flavour and depth to the omelette.
- Garlic: Use fresh garlic for the best flavour.
- Fish sauce: It provides a sweet, salty, umami flavour to this Vietnamese egg dish.
- Butter: Optional. It brings richness to the omelette.
- Cilantro: Optional. For garnishing.

To make this Vietnamese egg omelette, follow the steps:
Step-1
- Combine eggs, onion, spring onion, fish sauce, and salt in a bowl.
- Whisk well until light and frothy. (image below)
Step-2
- Heat the butter in a non-stick frying pan over low heat until the butter has melted.
- Fry garlic until slightly golden. (image below)
Step-3
- Pour the egg mixture into the pan. Cook for a minute on low heat.
- Add cilantro on top. (optional)
- Once the bottom side of the omelette is cooked, flip it gently.
- Cook for a minute or less. (image below)
Transfer the omelette to the plate by gently lifting it with a rubber spatula.
Serve this delicious Vietnamese omelette fish sauce immediately!!
Substitutions
- Not to worry if you don’t have fish sauce, though it is the key ingredient for most Vietnamese dishes. You can use soy sauce or a mix of soy sauce and lemon juice.
- You can replace cilantro with parsley, basil leaves, and dill, whatever you like.
Variations
- Experiment with the omelette flavour; try a blend of chicken and duck eggs.
- Add milk to make the omelette creamier.

Instructions
