What is green chutney?
Chutney is a versatile blend of fresh herbs, vegetables, fruits, and spices, perfect as a side dish or a dipping sauce. Green chutney, made primarily with fresh herbs, gets its vibrant color from the greens and is a staple in Indian cuisine.
There are endless ways to make green chutney, sweet, tangy, savory, or a combination of all three. It pairs beautifully with Indian meals and has become a must-have accompaniment for snacks and street food. Mint-cilantro chutney is especially popular, adding a burst of flavor while also aiding digestion.
Every household has its own take on chutney, tailored to personal taste. At home, I like experimenting with variations to see which combination works best with different dishes, for example, check my other green cilantro chutney made with tamarind paste.

What goes in this green chutney?
To make this Indian coriander mint chutney, you need the following ingredients:

- Coriander /Cilantro: I mostly use the leaves along with tender stems, trimming off the thick, fibrous ones. I find chutney tastes fresher with more leaves. Try both ways and see which suits your taste best.
- Green Chilies: A chutney isn’t complete without chilies. Adjust the quantity to your spice preference.
- Mint leaves: Fresh mint leaves bring a cool, refreshing flavor and vibrant green color to chutney. But if all you have is dry mint, it works too! Check my dry mint technique to get the best flavor out of dried leaves!
- Peanuts: They add body, creaminess, and a nice texture.
- Yogurt: Gives the chutney a thick, smooth consistency and a vibrant green color. For a dairy-free version, skip the yogurt and add extra lemon juice.
- Lemon Juice: Brings a refreshing tang and balances the flavors. Fresh lemon juice works best. Have plenty of lemons? Turn them into my lemon rice paste for another zesty treat!
- Spices: Cumin, carom seeds, sugar, and salt to taste.
How to make green chutney at home?
This Indian Cilantro mint sauce is simple and easy to prepare in 5 minutes. All you need is to combine the ingredients, add water, and blend them in a blender.

Blend everything into a smooth paste; the smoother it is, the more flavorful the chutney will be.
Adjust the water according to your preference: use less for a thick chutney, or more if you prefer a thinner, runnier consistency.
Isn't it a 5-minute task? So, make your own fresh chutney instead of buying!

I love fast recipes! This recipe is delicious and healthy. I replaced the yogurt with plain almond yogurt because I can’t have dairies but it was still so good.
You are right, using rock salt really boosts the taste. I also loved the peanuts in it 😋
