Onion - I prefer red onion as it gives a stronger flavor and a lovely pop of color. Plus, it gives bigger rings that are easy to coat. Use white or yellow onions if you prefer a mild sweetness.

Flour - Self-rising flour forms the base of the batter and helps coat the onion rings evenly.

Yogurt - It adds a slight tanginess, which balances the sweetness of onions and also tenderizes the batter, giving it a softer bite on the inside while staying crispy outside.

Prepare the rings by peeling and slicing onions into ½-inch thick rings. Separate gently so the rings stay intact.

In a mixing bowl, whisk the yogurt with salt and spices until creamy and smooth. Add the onion rings and let them rest in the mixture for 5–8 minutes to soak up the flavor.

In another bowl, mix together the flour, salt, pepper, and garam masala. Take the yogurt-coated onion rings and gently toss them in the flour mixture, making sure each ring is evenly coated on all sides.

Heat the oil in a deep frying pan or pot. Carefully place the flour-coated onion rings in hot oil. Fry until golden brown and crispy, about 2 -3 minutes per side.
