You need the following items to make coffee cookies without eggs or milk.

Coffee - Coffee is truly the star here, giving these cookies their exotic, rich aroma. I use regular instant coffee dissolved in an equal amount of hot water to make a smooth coffee mixture.

Butter - I prefer salted butter to help balance the sweetness. Be sure to soften it at room temperature before using.

How to make eggless coffee cookies?

Prepare coffee mixture

Prepare a coffee mixture by dissolving it in hot water. Set aside some time to get the rich flavour of the coffee.

Prepare cookie dough

In a bowl, beat butter at low speed for a minute (image 1). Add powdered sugar and beat it till creamy (images 2 - 3)

Stir in the coffee mixture prepared above and combine well (image 4).

Add the flour, cocoa powder, baking powder, and vanilla essence (image 5).

Mix well until everything comes together to form a dough (image 6). Wrap the dough in foil and refrigerate for about 1 hour.

After chilling, take a small portion of the dough (about 1 tablespoon or 25g) and roll it between your palms to form small, even balls.

Arrange them on a lined baking sheet, leaving about 2 inches of space between each one (image 7). Bake in a preheated oven at 160°C for 10–12 minutes (image 8).

Cool down for at least 10-15 minutes, and your yummy egg-free coffee cookies with no milk are ready to serve!!

How do I know coffee cookies are done?

Because coffee cookies are naturally dark, it can be tricky to tell when they’re fully baked. The best way to check is to look for subtle changes in their colour and appearance.
Before baking, the cookies will look dark, glossy, and round (see images below). Once baked, they turn a slightly lighter shade, lose their glossy surface, and flatten out a bit.
This change in colour and shape is the best sign that your coffee cookies are perfectly baked and ready to come out of the oven.

Another key sign to check is the firmness of the edges. Gently press the sides of a cookie with a spatula or knife; the edges should feel firm and hold their shape without collapsing inward. If the cookies still feel too soft and the edges easily sink when pressed, bake them for a few more minutes until they set properly.

Why isn’t my cookie dough coming together?

If your cookie dough is dry or crumbly, it’s usually because there isn’t enough moisture or fat to bind the ingredients. Fat acts as a natural lubricant, as it keeps the dough soft and helps hold everything together.
So, if you run into this issue, don’t worry! Simply add a tablespoon of butter or milk and mix it in — this should bring your dough back together nicely.

How do I fix runny cookie dough?

Well-balanced dry and wet ingredients make the perfect cookie dough. The presence of an excess of moisture or fat in the dough makes it runny or sticky. To fix such sticky dough, add a tablespoon of flour to the dough to balance the wetness in the dough.

Coffee mixture

Cookies dough

  • ¾ cup salted butter
  • ¾ cup powdered sugar
  • 1 cup all-purpose flour
  • ¼ cup cocoa powder
  • ¼ teaspoon baking powder
  • 1 tablespoon vanilla essence

Coffee mixture

  • Add hot water to the coffee to make a coffee mixture.
  • Stir well and set it aside.

Cookie dough

  • Beat the softened butter at a low speed for a minute.
  • Add powdered sugar and beat until creamy.
  • Stir in the coffee mixture and combine well.
  • To this mixture, add flour, cocoa powder, baking powder and vanilla essence and mix well with the help of a spatula.
  • Make a dough and cover it with a cling foil. Refrigerate for an hour.
  • After refrigeration, make equal-sized cookie balls and place them on a lined baking sheet.
  • Bake at 160°C for only 10-12 minutes.
  • Let the cookies rest on the baking try for 10 -12 minutes after baking.
