    It is a flavourful egg-free coffee cookies recipe in which the cookie dough is prepared by combining all the basic pantry ingredients like butter, sugar, flour, coffee and cocoa. The cookies are dark in colour with beautiful textures on them. These are crispy, crunchy cookies that taste so delicious. You can feel the richness of chocolate and coffee flavour in every bite.

    You need the following items to make coffee cookies without eggs or milk.

    Flour- I use all-purpose flour for these coffee cookies.

    Cocoa Powder- for best results, use unsweetened dark and pure cocoa powder only.

    Sugar- I use powdered sugar. If you have icing sugar, make use of it for better results.

    Vanilla - I use essence in this recipe but use vanilla extract if you have it as it gives a rich flavour.

    Butter- I prefer salted butter to balance out the sweetness of the cookies. Soften it by keeping it at room temperature before use.

    Baking powder - act as a leavening agent.

    Coffee- It is undoubtedly the heart of the recipe that brings exotic and rich flavour to the cookies. I use regular coffee. Submerge in an equal amount of hot water to prepare a coffee mixture.

    Following are the steps to prepare eggless coffee cookies at home:

    Step1 Prepare a coffee mixture.

    Prepare a coffee mixture by dissolving coffee in an equal amount of hot water. Set aside some time to get the rich flavour of the coffee.

    Step 2 Prepare cookie dough.

    • In a bowl, beat butter (room temperature) at low speed for a minute. (image1)
    • Add powdered sugar and beat it till creamy. (image 2 & 3)
    • Stir in the coffee mixture prepared above and combine well. (image 4)

    • Pour in the flour, cocoa powder, baking powder and vanilla essence. (image 5)
    • Combine all the ingredients well and make a dough. Cover the dough with a cling foil and refrigerate it for about 1 hour. (image 6)
    • After refrigeration, take a small portion of the dough (1 tablespoon approx. 25g) and make small balls of equal size by rolling them into your palms. Place them on a lined baking sheet spacing them 2 inches apart. (image 7)
    • Bake them at 160 degrees centigrade for 10-12 minutes. (image 8)

    Cool down for at least 10-15minutes, and your yummy egg-free coffee cookies with no milk are ready to serve!!

    Storage

    These coffee cookies stay fresh at room temperature for 3-4 weeks. Make sure to store them in an air-tight container.

    How do I know coffee cookies are done?

    Coffee cookies are dark in colour, so it is a bit hard to know when these are done. I believe that a change in colour and appearance is the first indication of perfectly baked cookies. If you observe in the image below, you will see the colour of the cookies is dark with a gloss on them, and the shape is perfectly round before baking, whereas the colour changes to a lighter shade with a loss of glossy and its shape changes to a flat after baking. (Image below).
    So, this is how you can get the first idea of whether cookies are baked or not.

    The other main indication you can look for in cookies is the firmness of the cookie edges. The cookie edges should not fall inwards when you gently press the sides of the cookie with a spatula or a knife. Rather these should stay firm. But if you find the cookies are easily pushed down, then bake them a few minutes more in the oven.

    Why my cookie dough is not coming together?

    The main reason for cookie dough not coming together is the dryness and crumbling in the dough as a lack of moisture or fat. Fat acts as a lubricant. It provides greasiness to the cookie dough and helps in binding the dry ingredients.
    So friends, if you encounter this problem while making your cookies, adding a tablespoon of butter or milk to the dough will save you!

    How do I fix runny cookie dough?

    Well-balanced dry and wet ingredients make the perfect cookie dough. The presence of an excess of moisture or fat in the dough makes it runny or sticky. To fix such sticky dough, add a tablespoon of flour to the dough to balance the wetness in the dough.

    1. Use soft butter only. If you forgot to keep it at room temperature, microwave it for a minute but avoid overdoing it.
    2. If you want crispy cookies, please do not flatten the cookie balls.
    3. You can also prepare the dough beforehand, but make sure to store it in the fridge. 
    4. Always refrigerate the dough before making cookies. It leads to the cooling of fat in the cookies and helps the cookies hold onto their texture.
    5. If your dough is not coming together, add a tablespoon of butter/milk to the dough.
    6. Keep cookies 2 inches apart on the baking tray as these will expand while baking.
    7. Avoid tough and dry cookie dough. 
    8. Well-balanced cookie dough is a necessary step for perfectly baked coffee cookies as the texture and taste of the cookies rely on the dough. So the dough must be soft, smooth and perfectly greased.

    • After refrigeration, make equal sized cookie balls and place them on a lined baking sheet.
    • Bake at 160° C for only 10-12 minutes.
    • Let the cookies rest on the baking try for 10 -12 minutes after baking.
