How to air fry potatoes and carrots?
Thoroughly wash the potatoes and carrots under running water. Peel them to remove any dirt or soil residue. Cut them into your preferred shape. I've sliced them small and thin for quick and even air frying, as shown in the image below.

Combine the vegetables and all the other ingredients in a large mixing bowl. Mix well to nicely coat the seasoning (image below).

Place these seasoned veggies in the air fryer. Set the temperature to 200°C for 20 minutes or until they are golden brown and crispy from the outside (image below).

Garnish with fresh, finely chopped cilantro leaves. Optionally, finish them off with a drizzle of 2-ingredient chilli oil for a touch of heat and a pop of color!
Serve warm roasted air-fried potatoes and carrots with your favorite dip!

FAQs
Cooked vegetables generally have lower nutritional value than raw ones, with nutrient loss varying based on the cooking method. The longer vegetables are exposed to heat and water, the more nutrients they lose.
Air frying is a healthier cooking option since it minimizes direct heat exposure that can degrade vitamins and minerals. Additionally, the air fryer helps maintain a crisp texture by keeping the surface of the vegetables dry.
You can reheat leftover air-fried potatoes and carrots in two ways:
Air Fryer: Reheat at 170°C for about 5 minutes or until warmed to your liking.
Oven: Bake at 180°C for 10 minutes, adding more time if required for desired crispiness.
The air-frying time for potatoes and carrots depends on their size and thickness:
Small slices (1-inch pieces): 15-20 minutes at 200°C, shaking halfway.
Larger chunks: 25-30 minutes at 200°C, shaking occasionally.
Whole baby potatoes & carrots: 30-35 minutes at 200°C, flipping halfway.
Tips
- Every air fryer is different, and so is its cooking time. Adjust time accordingly.
- Adjust spices or seasoning to your liking.
- Cut veggies into small chunks for faster cooking.
- Store the leftovers in the refrigerator. Reheat before use.
