Ingredients

To make this cold chicken pasta salad, you need the following items:

labelled ingredients of chicken and sweetcorn pasta salad.

Pasta - I use penne pasta for this salad, but you can opt for gluten-free pasta if needed. It serves as a great base, offering the perfect balance of carbs and texture.

Chicken - Boneless, skinless chicken breast adds a hearty, protein-rich boost to the salad. For a plant-based alternative, feel free to use options like cheese, chickpeas, tofu, or other protein-rich ingredients.

Corn - Frozen sweetcorn kernels. A touch of sweetness enhances the overall flavor profile.

Cucumber - Brings a refreshing crunch to the dish and complements the other ingredients well. If you're looking for more refreshing cucumber ideas, try my FODMAP cucumber salad boats for a light and gut-friendly side.

Mayonnaise - Fat-free. The base of the dressing adds richness and helps to blend the flavors.

How to make chicken and sweet corn pasta salad?

Bring a pot of water to a boil with a pinch of salt and a teaspoon of oil. Stir in the pasta and cook for 5-8 minutes. Add the chicken slices to the pot and cook for another 8-10 minutes.

When the pasta and chicken are nearly cooked, add the frozen corn kernels and continue cooking for an additional 5 minutes.

Adding of sweet corns to the pot of boiled pasta along with chicken.

Strain the pasta, chicken, and corn. Pour cold water over it to cool down. Keep it in the fridge if you want to chill it faster.

Make homemade Greek yogurt - Optional step!

Pour the plain yogurt into a strainer for 30 minutes to separate the whey from the yogurt, resulting in a thicker, creamier consistency. This is what we call- Greek Yogurt.

Omit this step if you want to use store-bought Greek yogurt.

Strained Yogurt on the strainer.

In a large mixing bowl, combine all the dressing ingredients (mayonnaise, Greek yogurt, seasonings). Stir in cold pasta, corn, and chicken, followed by spinach and cucumber.

Give it a good mix to coat the dressing well with each ingredient.

Let the salad chill in the refrigerator for at least 20 minutes before serving. This allows the flavors to meld together beautifully until use.

Serve this chilled chicken and sweetcorn pasta salad for a light lunch, a side dish for your barbecue, or a make-ahead meal for busy days.

Serving Ideas

Pair it with crispy garlic bread, cottage cheese avocado toast, or a crusty baguette for a more satisfying plate.

Soups such as tomato soup, chicken soup, 3c soup, and butternut squash tomato soup for a comforting pairing.

Top with a boiled fried egg masala or a poached egg.

Add a refreshing, sweet element with a simple fruit salad or steamed stir-fried vegetables.

Serve with grilled meat, air-fried potatoes and carrots, or air-fried frozen roasted potatoes.

Pair with a cool, refreshing drink such as watermelon mint cooler, pineapple matcha, or masala lassi.

Storage

It is best to consume on the same day you prepare it. You can store it in the fridge for 1-2 days.

Avoid keeping it at room temperature, as chicken and cucumber can spoil.
