Raita is often served alongside spicy curries, biryanis, and other rich dishes to balance the heat and add a refreshing contrast. It's typically made by mixing yogurt with various ingredients:
- Boondi: Indian fried chickpea balls for boondi raita.
- Cucumber: For kheera raita or a refreshing cucumber dip.
- Pineapple: For a tropical pineapple raita.
- Onions: For a classic onion raita.
- Fruits: For a sweet twist in fruit raita.
- Mint and mayonnaise: For an all-purpose dip with a burst of freshness.
Each variation brings its unique flavor, letting you customize the raita to suit your meal.
Ingredients of veg raita
To make raita with vegetables, you need these items:
- Yogurt - The base of the raita, yogurt provides probiotics that aid digestion and promote gut health. I use thick homemade yogurt prepared from whole milk to make raita.
- Cucumber - This adds a refreshing crunch and hydration, as cucumbers are rich in water. I prefer grating it rather than chopping. Choose whatever suits you the best.
- Carrot - Grated. It enhances texture and brings natural sweetness, packed with beta-carotene for eye health.
- Onion - Finely chopped. Onion adds a mild sharpness and contributes to overall flavor complexity.
- Coriander - Brightens up the raita with a touch of refreshment.
- Salt and raita masala as seasoning. Use cumin powder if you don't have raita masala.

- Mint leaves - These lend a refreshing, minty twist to the raita dip. Oops, I missed including them in the image above. If you don't have fresh mint leaves, dried ones work just as well.

How to make mix vegetable raita?
You can find this mix veg raitha recipe video below, but here is a quick overview of the procedure:
Prepare the yogurt by whisking the yogurt in a bowl until smooth and creamy. Add salt and raita masala powder. Stir well to mix the seasoning.
Mix in grated cucumber, finely chopped onion, grated carrot, and coriander leaves. Mix well.
Sprinkle the dried mint leaves over the top for a minty aroma and flavour. It is an optional step, but it enhances the aroma of this yogurt dip! Refrigerate for 15–20 minutes before serving to enhance the flavor. Serve chilled mixed veg raitha as a side dish.
Serving Suggestions
- Enjoy it with rice dishes such as Bombay chicken biryani, peas rice, pumpkin rice, cumin rice, or plain rice.
- It complements well with egg parathas, stuffed paneer aloo parathas, or plain ones.
- Serve it with curries like ghee bhuna chicken, red kidney beans, matar mushroom masala, etc.,
- Compliment well with lentils and vegetables like black chickpeas, white lentils, mixed paneer, and fenugreek potatoes.
- Works well with tandoori chicken, kebabs, or grilled fish.
- Dressing for pasta such as chicken corn pasta salad.
- Drizzle over the aloo chana chaat or serve with snacks for extra freshness.
Tips
- Whisk the yoghurt well before adding the vegetables.
- Add red chilli or green chilies for a spicier raita.
- Serve mixed veg raita chilled for the best flavor.
- Adjust the quantity of vegetables to your preference. I usually add more cucumber than onion.

Ingredients
- 1 ½ cup Yogurt
- 1 Cucumber
- ½ Carrot
- ¼ Onion
- Cilantro
- 1 teaspoon Raita masala / Cumin powder
- 1 teaspoon Salt
- Dried mint leaves
Instructions
Prepare the vegetables
- Wash all the vegetables thoroughly. Grate the cucumber and carrot. Finely chop the onion and cilantro.
Prepare the raita base
- Whisk the yogurt until smooth. Add salt and raita masala or cumin powder, then whisk again to combine.
Assembly
- Add all the prepared vegetables to the yogurt and stir well.
- Garnish with dried mint leaves. Serve chilled for the best flavor.
