- Melt butter and condensed milk using a double boiler technique. Keep the heat low.
- Stir in black chocolate and continuously stir for 2-3 minutes or until it melts.
- Pour this hot fudge into a star-shaped silicone mold with the help of a spoon.
- Press the filled molds down with your fingers to level off the surface.
- Top up with sprinkles and gently press them down.
- Chill for 3 hours or overnight or until firm.
- Unmold and serve!
Substitutions
- Replace the dark chocolate with the one you like.
- Substitute the salted butter with the unsalted one if you don’t mind sweetness on a little higher side.
- If you don’t have a star-shaped silicone mold, you can chill the fudge in any tray or tin and later cut it into stars using a star cutter.
Variations
- Add nuts for crunchy and nutty fudge.
- Give these stars a coconut flavor by adding desiccated coconut if you love coconut.
- You can also decorate with M&M or decorate outlines with royal icing.
Equipment
To make these chocolate fudge stars, you need a star-shaped silicone mold. For this recipe, I used a silicone ice tray from Coles.
Storage
- Store these no-bake Christmas treats in the refrigerator. These stay good for almost 4-5 days.
- As these chocolate star treats contain butter and chocolate, leaving them on the shelves for a long time will cause them to melt. So, always keep them refrigerated!!
- But if you live in a chilly place or the weather is cold, when you make them, you can leave them on the shelves for 2-3 days.
Troubleshooting
The only reason for chocolate fudge to be dried is the lack of enough fat content. You have not added the quantities as per the recipe mentions.
Yes, you can melt all the ingredients in the microwave. Be extra vigilant to avoid overheating the ingredients. The best way to melt all the ingredients using low heat.
There are several reasons for fudge stars not coming up tidy which are:
1. The star mold has not filled enough to fill the empty spaces in the mold.
2 You need to press the filled stars down with pressure to give them the exact shape of a star. Perhaps, you might have skipped this step.
3. The overfilling of the molds could also be one of the possibilities. Therefore, make sure to wipe off the extra fudge.
4. Furthermore, fudge stars are not given enough time to set.
No, you don't need to grease silicone molds for fudge, as these are non-stick. Moreover, these are so flexible that fudge comes out easily without adhering to the surfaces.
Tips
- Melt all the ingredients on low heat.
- Avoid overheating to prevent the burning of ingredients.
- There is no need to grease the mold.
- Transfer the fudge to the mold while it is hot. If it gets cold, make it a little warmer by placing again on the double boiler for a minute or less.
- After filling the star mold, press down tightly with your fingers to fill any empty spaces. It will help them in getting the exact shape of a star.
- Wipe out the excess fudge and smoothen the surface to have neat and clean chocolate fudge stars.
- Refrigerate for sufficient time to set them properly; otherwise, fudge stars will not come out neatly.
- I highly suggest using a silicone mold, as it is highly flexible, so it is easy to remove the chilled stars.
This recipe is inspired by Caramilk fudge stars by Sarah Murphy published in Better Homes and Garden magazine of A Christmas Celebrations edition.
