📋Ingredients
To make this easy coconut strawberry dessert, you need only 3-ingredients:

Fresh strawberries are the star ingredient in these bars. Their juicy, refreshing flavour adds a lovely balance of sweetness and tanginess, along with a beautiful pop of colour throughout the bars.
If you enjoy the fresh flavour of strawberries, you may also like strawberry chocolate cake and refreshing strawberry smoothie.
Desiccated coconut gives the bars their texture and delicious tropical flavour. It also helps absorb moisture and gives the mixture structure.
If you're like me and love coconut in everything, you'll surely love these coconut cream rolls and chocolate coconut bars.
Sweetened condensed milk adds sweetness and creaminess while helping hold all the ingredients together, just like in my no-bake cranberry slice.
Pistachios are optional and used simply as a garnish. Their nutty flavour also shines in these air-fryer pistachio cookies.

👩🍳How to make coconut strawberry bars?
Wash and rinse the strawberries thoroughly, then pat them dry with a paper towel to remove any excess moisture. Chop them into small, bite-sized pieces.

Combine the strawberries, coconut, and condensed milk in a mixing bowl. Stir everything together until the ingredients are evenly combined.

Transfer the mixture to a silicone bar mould or any lined tray and press it down firmly. I've added finely sliced pistachios on top for garnish. This is completely optional, but it adds a beautiful, vibrant contrast. Refrigerate until firm enough to unmould.

Once the coconut strawberry bars are set, gently unmould them as they are soft and delicate. If using a tray, slice into bars before serving.

❄️Storage
Store the strawberry coconut bars in an airtight container in the refrigerator. Because they contain fresh strawberries, they are best enjoyed within 3-4 days.
🥄Serving Ideas
These soft coconut and strawberry bars are delicious straight from the refrigerator. For an extra special treat, you can:
Cut them into smaller bite-sized pieces for parties or gatherings.
Serve them chilled with a cup of tea or coffee.
Enjoy as a light dessert after a meal.
A quick, sweet treat to enjoy on the go.
ℹ️FAQs
Fresh strawberries work best for this recipe because frozen strawberries release more water as they thaw. Too much moisture may make the mixture soft.
If using frozen strawberries, thaw and drain them very well before adding them.
Yes! Instead of pressing the mixture into a pan, you can shape it into small balls or bite-sized portions and chill them.

📝Tips
Chop the strawberries finely. Smaller pieces mix more evenly throughout the coconut mixture.
Press the mixture firmly. This helps the bars hold their shape when unmoulded or sliced.
Allow enough chilling time. The bars need time in the refrigerator to firm up properly.
Be gentle while unmoulding. These bars are very soft and can break if not handled with care.
Keep them refrigerated. Since these bars contain fresh strawberries, they are best stored in the fridge.
Number of bars. This may vary depending on the size of the moulds and the amount of mixture used.
