About the recipe
Gulab Jamun ice cream is an irresistible fusion of Indian and Western desserts, offering a delectable blend of flavors and textures. Made with just three ingredients, this recipe brings together India's most beloved sweet dish, gulab jamun—a deep-fried khoya dumpling (reduced milk solids) soaked in rose water, saffron, and cardamom-infused sugar syrup—and luxuriously creamy ice cream.
This dessert brings the rich, sweet, and aromatic essence of gulab jamun with ice cream's cooling, smooth creamy texture, creating a treat that simply melts in your mouth. The creamy chunks of jamun in the ice cream make it the ultimate summer indulgence.
Just look at its gorgeous pale hue and inviting grainy texture! This dessert is as visually appealing as it is soothing, ensuring you’ll crave scoop after scoop on a hot day! It is the perfect companion for summer dessert.
Ingredients
To prepare this homemade dessert, you will need only these 3 ingredients:
- Condensed milk- Sweetened condensed milk works best for this recipe as you do not need any other sweetener to add to the ice cream.
- Gulab jamun- I use ready-to-eat Haldiram Gulab jamun to make this Indian Jamun ice cream. It is so convenient to use. You can easily get it at any Indian grocery store or Asian aisle of any supermarket. Use whatever is handy to you!
- Thickened cream- To make this rich, creamy ice cream, use heavy cream/thickened cream that contains at least 30% fat content.

Create an Indian-inspired fusion bowl by combining this ice cream with falooda noodles, rose syrup, basil seeds, and jelly cubes.
Pair it with fresh tropical fruits like mango, pineapple, or lychee to complement its rich and aromatic flavors.
FAQ
I used ready-made gulab jamun of the Haldiram brand to make this ice cream. According to their label claim, these are prepared from wheat flour and semolina, which contain gluten, so this ice cream is not gluten-free.
The main reason for the ice cream with jamun not setting up could be the presence of liquid, such as sugar syrup if added by mistake/unknowingly, or not keeping the ice cream in the freezer for enough time.
Storage
Store this ice cream with gulab jamun in the freezer. It stays fresh for months.
Tips
- Use chilled cream to make ice cream.
- Avoid using frozen thickened cream.
- No flavor is added in this recipe as I want the pure gulab jamun flavor to shine. Feel free to add any if you like.
- Add the number of gulab jamun based on your sweet preference.
- Crush or chop gulab jamun into small pieces before adding them to the ice cream, especially if you are not using an electric mixer.
- Cover the ice cream with a wrap before freezing to prevent ice crystal formation.
- Freeze overnight for the best gulab jamun ice cream flavor
