So, based on edible parts, these can be categorized into 8 types:
- Flower vegetables are flower parts of the plant. Examples are broccoli, artichoke, cauliflower, etc.,
- Fruit vegetables are botanically classified as fruits like cucumber, tomato, eggplant, etc.,
- Stem vegetables grow above ground and have edible stems, e.g. asparagus. fennel, kohlrabi etc.,

- Leafy vegetables are often known as greens, salad greens, or vegetable greens, leafy vegetables. These include spinach, cabbage, lettuce, etc.,
- Root vegetables grow underground, like carrots, radishes, ginger, etc.,
- Bulb vegetables grow just below the ground. An example includes onion, shallot, garlic, etc.,
- Pod and seeds are vegetables that contain seeds inside a pod, for example, peas, beans, lentils, etc.,
And, as food groups, vegetables can be grouped as:
- Dark-green vegetables are dark green leafy vegetables, for example, amaranth leaves, bok choy, and broccoli.
