The paneer mixed veg is prepared by marinating veggies and paneer in oil infused with spices and then cooked in tomato puree. This paneer with vegetables tastes super yummy, with all the flavourful spices infused into them. The red tomatoes give this savoury dish a beautiful, vibrant reddish brown colour which is so appealing.

Ingredients
To make paneer with mixed veggies, you need the following items:
- Onions - Chop onions as you like. I have white onions available. Use any.
- Tomatoes- I blend them to make their puree. Use bright red tomatoes to give this veg mix a vibrant red colour.
- Chillies- optional
- Paneer (cottage cheese)- I use fried frozen paneer cubes in most of my preparations, as I like its taste and texture after cooking. You can use a fresh one but fry it slightly to a light brown. It will prevent paneer from crumbling while cooking with veggies.
- Vegetables:
- Cauliflower- Thoroughly washed in salted water and cut into slightly big chunks.
- Peas - Frozen. No need to thaw them. Use directly from the fridge.
- Carrot - Orange. Peeled and cut into long slices.
- Potato - peeled and cut into long slices.
- Oil for marinade and cooking.
- Spices:
- Salt
- Turmeric
- Red chilli powder
- Garam masala

Preparation
- Wash and chop all vegetables as you like.
- I cut cauliflower in slightly big chunks to avoid being mushy after cooking. For potatoes and carrots, I like them cut into long thin slices. I have grated ginger and garlic using a coarse grater side.
Marinate paneer with vegetables
- Prepare marinade by combining oil, salt, red chilli and garam masala into a large bowl. Mix well.
- Coat all vegetables and paneer cubes with this marinade. Keep this aside for about 20-30 minutes. Meanwhile, cook onions and ginger garlic with tomatoes. (Next step)
Cooking method
- Heat oil in a large non-stick pan. Add cumin seeds and turn them aromatic.
- Next, cook onions for 8 minutes on low heat or until slightly softened. Add ginger and garlic and turn them slightly brown.
- Stir in bay leaves, salt, turmeric, chilli and garam masala and again cook for a minute. (image below)
- Pour in tomato puree and cook for 5-7 minutes. You can also add chillies while making tomato puree if you like spicy.
- After cooking tomato puree, stir in marinated paneer and veggies. Fry them for 5-7 minutes on low heat to prevent the burning of spices.
- Cover with a lid and cook until the veggies are done. Don’t forget to toss them occasionally.
- Garnish with fresh coriander leaves. Serve hot with roti, bread or rice.

Substitutions
- If frozen paneer is unavailable, substitute it with a fresh one. Don’t forget to fry it if you are marinating it, like in this recipe. If you don’t want to fry paneer cubes, add them in the last when all vegetables are cooked.
- Note- Fry paneer cubes until slightly browned on low heat only.
- Substitute cottage cheese with tofu for vegan options.
- Yes, you are free to replace frozen peas with fresh ones. (I prefer a frozen one as an easy option as I am so lazy! Right?)
Variations
Love adaptations try these:
- Add a tablespoon of schezwan sauce to try a fiery spicy flavour.
- Squeeze a fresh lemon into the finished dish for a tangy lemony flavour.
- Garnish with fresh coriander leaves to boost the flavour.
- Try cumin powder and coriander powder into a marinade for an additional flavour.
- Sprinkle a handful of crumbled dried fenugreek leaves to give them a unique exotic flavour to the dish.

Leftover Suggestions
Don’t worry about leftover mixed paneer, as there are several ways to use them like:
- Serve this with plain paratha or bread for breakfast. It tastes super delicious.
- Smash the paneer veggies using a smasher and use them as fillings for parathas, sandwiches, wraps, etc.
- Use these paneer veggies for making quiche.
- Add cucumber, onions, and lettuce to them. Squeeze a lemon to it, and you are ready with a bowl of yummy salad.
- Reserve it for the next day’s lunch to serve with rice.
- Make a pie with them and serve hot.
- Prepare delicious pasta noodles by tossing them in these spice-flavoured cooked veggies.

Storage
Store this paneer mixed vegetables in the fridge. It stays good for 3-4 days.

- Do not overcook onions. Keep it partially cooked to prevent them from sticking to the bottom of the pan.
- Cook onions on low heat only as we don’t want to burn them.
- Marinating vegetables is not essential, but it enhances the flavour of spices. I highly suggest this step as spices would be infused deeply into vegetables and paneer and give superb aroma and flavour to the dish.
- If using fresh paneer, fry them until slightly brown and let them cool before marinating.
- Frying paneer is a must as it will prevent it from crumbling while cooking with veggies.
- Add green chillies while making tomato puree to make this recipe spicier.
- Use a heavy-base bottom or a non-stick frying pan to make this paneer dish.
- Please don’t add water unless you feel the veggies are sticking to the base.
- Use chopped or grated tomatoes if you don’t have time to puree them.
- Grating ginger and garlic enhances their flavour. Skip this if you are short on time.
- Garnish with coriander leaves. (I skipped this as kids at my place don’t like these green things..?)

Ingredients
- 1 inch Ginger fresh
- 4-5 cloves Garlic fresh
- 2 Onions fresh
- 4 Tomatoes fresh
- 300 g Cauliflower fresh
- 120 g Peas frozen
- 150 g Carrot fresh
- 180 g potato fresh
- 150 g Paneer cubes frozen
- 6 tablespoons Oil
- 1 tablespoon salt
- 1 tablespoon red chili powder
- 1 tablespoon garam masala
- 2 bay leaves
Instructions
Marinate veggies and paneer
- Prepare marinade by combining salt, red pepper, garam masala and turmeric into a bowl. Coat all the veggies and paneer well. Keep aside for 20-30 minutes.
Cooking method
- Heat oil in a pan. Add cumin seeds and turn them aromatic.
- Saute onions for 7-8 minutes. Add grated ginger and garlic. Turn them brown.
- Stir in bay leaves, salt, turmeric, red chilli powder and garam masala. Cook for 2 minutes on low heat.
- Pour in tomato puree and cook for another 3-4 minutes.
- Add marinated veggies and paneer. Combine well.
- Cover with a lid and cook until done with occasional stirring.
- Garnish with fresh cilantro leaves and serve hot with bread, roti or rice
