There is no comparison to fresh produce, but I still prefer to use frozen peas as a fantastic alternative to fresh peas because of the convenience of no shelling and their quick cooking time. There's no need to thaw them beforehand; they go straight into the pan and cook within minutes, ensuring a bright color and perfect texture.

To make curried green peas, you need these items:
- Peas - Fresh, canned, or frozen. I use frozen peas for this green peas curry recipe as they are convenient, and cook quickly. Use whatever is handy for you!
- Vegetables - Onions, tomatoes, ginger, garlic, and green chilies are the base for curry preparation. Dice them finely or use a chopper to cut them.
- Spices - Salt, turmeric, gram masala, red chili, cumin seeds, coriander seeds, black pepper corms, black cardamom, cinnamon stick, and bay leaf. These spices balance out the sweetness of peas with their warmth, spiciness, and aroma.
- Oil and clarified butter (ghee).

How to make curry with green peas
You can find this easy curried peas recipe video below, but the quick overview of the procedure is as follows:
Heat the oil in a pan. Once hot, add cumin seeds and make them aromatic. Stir in garlic and onions, and fry them until slightly translucent.
Next, add ginger and all the spices. Cook for 2-3 minutes. Add tomatoes with chilli and cook until the masala (curry base) is soft and mushy as shown in the image below.
Stir in the frozen peas directly from the freezer. Mix well and cook for 2-3 minutes to coat them with the masala. Add water and bring it to a boil. Cover with a lid and let it simmer for 5-8 minutes on low heat.
Adjust the spices and stir in a tablespoon of ghee. It's completely optional but boosts the flavor of peas. Garnish with cilantro and serve the hot green peas gravy with your favorite food!

Ingredients
- 300 g green peas (2.5 cups)
- 2 onions
- 4-5 garlic
- 1 inch ginger
- 2 tomatoes
- 2-3 chilies
- 1 teaspoon salt
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric
- 1 teaspoon garam masala
- 3-4 black peppercorns
- 1 bay leaf
- 2 black cardamoms
- 1 cinnamon
- ½ teaspoon cumin seeds
- 2 tablespoon oil
- 1 tablespoon ghee (optional)
Instructions
- Finely dice the onions, garlic ginger, tomatoes, and chilles.
- Heat oil in a pan and add cumin seeds. Turn them slightly aromatic.
- Stir in garlic and fry for a few seconds. Add onions and saute until translucent.
- Next goes in ginger and all the spices. Cook for 2-3 minutes on low heat.
- Stir in tomato and chilies. Cook until the curry base is ready.
- Add the peas and mix well. Cook for 2-3 minutes to coat them with the masala. Then, add water and bring it to a boil. Cover with a lid and let it simmer for 5-8 minutes on low heat.
- When the green peas are cooked, add a tablespoon of ghee. It is completely optional.
- Serve the hot green peas curry with your favorite food!
