What is curry cut chicken?

Curry-cut chicken means a whole chicken cut into medium-sized pieces, usually with bones. It's the most popular cut for making Indian curries, biryanis, and masalas because the bones add extra flavor and richness to the gravy.

Ingredients

To make this Indian-style bone-in chicken curry, you need these ingredients:

ingredients for curry cut chicken masala.

Bone-in curry-cut chicken works best for this recipe as it adds depth and richness to the masala. The bones help create a more flavorful and well-rounded curry compared to boneless pieces.

Masala - For curry, use simple pantry staples like onion, tomato, ginger, and garlic to build its flavourful masala base. If you prefer to save time, you can prepare this in advance as a batch. For a detailed step-by-step guide, check out my post on zero masala paste, where I've shared how to make and store it for easy everyday cooking.

Spices - I use meat curry masala along with a few common pantry spices. The following two are the key flavour boosters as they make a remarkable difference to the overall aroma and depth of the dish:

Dried mint - Adds a refreshing aroma and enhances the overall flavor profile of the curry. You can easily make your own at home. Check my post on how to dry mint for easy step-by-step instructions.

Kasoori methi (dried fenugreek leaves) - Adds a subtle earthy bitterness and depth to the masala. It's also widely used in dishes like potatoes with dried fenugreek for its signature flavor.

How to make curry-cut chicken curry?

Heat oil in a deep pan. Add bay leaf and cumin seeds. When they begin to crackle, add the chopped onions. Cook until golden brown. Add ginger-garlic paste and sauté until fragrant.

Stir in the tomato puree with turmeric, meat curry masala, black pepper powder, chili powder, and salt. Cook until the mixture thickens and oil begins to separate from the sides.

Add the washed chicken pieces to the masala and cook on high heat for 8-10 minutes, stirring occasionally.

Pour in some water, mix well, then cover and simmer on medium heat for about 15-20 minutes, or until the chicken is tender and fully cooked through.

Once the chicken is cooked, sprinkle with dried fenugreek leaves, dried mint, and garam masala. Stir well, and simmer for 2-3 minutes.

For an extra kick of heat and vibrant color, drizzle over a tablespoon of homemade 2-ingredient chilli oil. Garnish with fresh coriander leaves and serve the chicken curry hot with bread or rice!

Serving Ideas

It pairs beautifully with a variety of flatbreads, such as naan, roti, kulchas, and plain paratha.

For a comforting meal, serve it with steamed basmati rice or fragrant jeera rice.

Add a burst of flavor with a side of chutneys like green cilantro chutney, garlic chutney, or tangy tomato-onion chutney; each one elevates every bite.

For freshness and crunch, pair it with salads such as onion, cucumber-beet salad, or a light, nutty crunchy salad for contrast.

Cool down the spices with refreshing yogurt dips such as mix veg raita, boondi raita, cucumber raita, or mint yogurt sauce.

To complete the meal, pair it with traditional drinks like lassi masala or mango lassi, or a refreshing watermelon mint cooler - the perfect way to balance the spices and finish the meal on a cooling note.

Expert Tips

If you have leftover chicken masala, use it as a base to make a quick Bombay chicken biryani by layering it with cooked basmati rice and garnishing with fried onions and mint.

Crush the dried fenugreek leaves before adding them to deepen the flavor.

Once the curry is cooked, use warm water to adjust the consistency.
