Ingredients
To make these strawberry turnovers with puff pastry, you need only 2 ingredients:

I love using strawberry jam with small pieces of crushed strawberries in this recipe. The little berry pieces add a delicious fruity flavour and aroma, and they become beautifully jammy as they bake. They bring a lovely burst of strawberry goodness to every bite, just like in puff pastry jam tarts.
For these little triangle puffs, I prefer pre-rolled puff pastry sheets, as they save time and are ready to use straight away. If you're using a pastry sheet that isn't pre-rolled, gently roll it out with a rolling pin before using.
Egg for egg wash (optional).

How to make jam puff pastry triangles?
Thaw the puff pastry according to the package instructions. Place one pastry sheet on a lined baking tray.
Spread the jam evenly over the pastry sheet, leaving a small border around the edges. Don't spread the jam right to the edge, as it can squeeze out when you add the second pastry sheet.

Place the second puff pastry sheet over the jam-covered pastry. Gently press around the edges with your fingers to seal the two pastry sheets together.
Using a sharp knife or pizza cutter, cut the pastry into small triangles. Try not to press down too heavily while cutting, as you want to keep the layers of puff pastry intact.

If using, lightly brush the tops with beaten egg. This step is optional, but it gives the pastries a lovely golden finish.

Preheat the oven for 5 minutes. Bake these mini puff triangles at 180°C for 8-10 minutes or until the pastry puffs are golden brown and puffed up.

Allow the jam puff pastries to cool on a wire rack for a few minutes before serving.

Storage
Allow the pastries to cool completely before storing them. Place them in an airtight container and keep them at room temperature for a few days. For the best texture, enjoy them fresh, as puff pastry gradually loses its crispness during storage.
For the best texture, I recommend enjoying these pastries fresh. If you want to prepare them ahead, you can assemble the unbaked pastries and freeze them until firm. Transfer them to a freezer-safe container or bag and bake from frozen, adding a little extra baking time as needed.
Tips
Keep the puff pastry cold.
Puff pastry is easiest to work with when it is still cold. If it starts getting soft or difficult to handle, refrigerate it for 5-10 minutes.
Don't overfill with jam.
It can be tempting to add lots of jam, but too much can leak out during baking. A thin, even layer works best.
Leave a border around the pastry.
Keeping the jam away from the edges makes it easier to seal the two pastry sheets together.
Seal the edges well.
Gently press the edges together before cutting to help keep the jam inside.
Egg wash is optional.
You don't need an egg wash for the recipe to work. It simply gives the pastry a more golden, glossy appearance.
