Ingredients
Mug Cake
- 25g g Carrot ¼ cup
- 50 g All-purpose flour ⅓ cup
- 25 g Sugar 2 tsp
- ¼ teaspoon Baking powder
- ⅛ teaspoon Baking soda
- 60 g Yogurt ¼
- 15 ml Oil 1 tsp
- 10 g Butter 1 tbsp
- ½ teaspoon Vanilla
- ¼ teaspoon Cinnamon powder
- 1-2 tablespoon Milk optional
Cream cheese frosting
- 1 tablespoon Cream cheese
- 1 teaspoon Powdered sugar
- 2-3 Walnuts
Instructions
Mug cake
- Wash the carrot well, peel and grate it finely. If using walnuts, chop them roughly.
- In a microwave-safe mug, pour in yogurt, oil, butter, and sugar. Mix until smooth.
- Stir in the flour, baking powder, baking soda, vanilla, and grated carrots.
- Mix with a spoon until everything is well combined. Add a splash of milk if the mixture feels too thick to stir.
- Microwave on high for 2-3 minutes (depending on your microwave). Let it cool for 15-20 minutes.
- Skip the frosting if you prefer a warm, cozy dessert. Serve this soft and warm carrot cake mug, especially with a cup of chai.
- But if you plan to add frosting, chill the mug cake in the fridge for at least 20-30 minutes.
Cream cheese frosting
- Once the carrot cake mug cake has cooled, prepare the frosting by beating cream cheese and powdered sugar until light and fluffy.
- Spread it over the cake, then top with chopped walnuts and freshly grated carrot.
- Chill it for 20-30 minutes before serving.
- Serve this chilled, moist carrot mug cake with cream cheese frosting when sweet cravings hit!
