Ingredients
- 150 g Pineapple (approx 2 cups)
- 1 Cucumber
- ¼ Onion
- 1 teaspoon Salt
- 1 tablespoon Lemon Juice
- a few Cilantro
- a few Mint leaves
- 2-3 tablespoon Hemp seeds
Instructions
- If using canned pineapple, drain it well (and give it a light rinse if packed in syrup).
- Cut the pineapple, cucumber, onion, cilantro, and mint into bite-sized pieces.
- In a large mixing bowl, combine pineapple, diced cucumber, sliced red onion, chopped chillies, fresh cilantro, and mint.
- Stir in lemon juice, salt, and hemp seeds. Gently toss everything to coat.
- Taste and adjust seasoning if needed. For the best flavor, let it chill in the fridge for 10–15 minutes.
- Right before serving, sprinkle with hemp seeds for an extra crunch if you like. Serve pineapple cucumber salad cold and enjoy!

Notes
- Fresh pineapple is ideal, but canned pineapple (in juice, not syrup) also works, just drain it well before using.
- Start with a small amount of chili oil and adjust to your preferred level of spiciness.
