To make these hidden veggie muffins, you need the following items:

Labelled ingredients for veggie egg bites.
  1. Vegetables- Onion, carrot, bell pepper, cilantro, and chilies.
  2. Egg- Use whole eggs for the best results.
  3. Cream- I use heavy cream for these veggie and egg bites. This helps keep them moist and creamy.
  4. Cheese- Mozzarella cheese. Any cheese will work for the recipe.
  5. Seasoning- Salt and black pepper

How to make egg and vegetable bites?

Instructions:

  1. Whisk eggs, heavy cream, and seasonings in a bowl and set aside.
  2. Finely chop onions, bell pepper, and cilantro, and grate the carrot.
  3. Combine the vegetables and seasoning in a bowl.
  4. Fill the lined muffin tin with the vegetable mix, then pour the egg mix on top.
  5. Bake in a preheated oven at 180°C for 8-10 minutes.
  6. Allow the bites to cool before removing them from the tin.
  7. Serve these flour-less muffins with green dip, garlic dip, chili sauce, etc.,

Storage

Allow the veggie egg bites to cool completely before storing them. Once cooled, transfer them to an airtight container or resealable plastic bag. Consume the egg bites without flour within 3 to 4 days for the best quality and freshness.

Tips

  • I strongly recommend using silicone mold or liners to prevent these egg bites from sticking to the sides of the tin and, save you time cleaning the tin.
  • Fill the egg bite molds about ¾ full to leave room for expansion during cooking.
  • Allow the egg bites to cool for a few minutes before removing them from the molds. This helps them set up and makes them easier to handle.
  • Get creative with your ingredients! Add your favorite veggies, cheeses, meats, or herbs to customize the flavor of your egg bites.

Equipment

Ingredients
  

Vegetable mixture

  • 2 Carrot
  • 1 Onion
  • 1 Bell pepper
  • 50 g Mozzarella cheese
  • ¼ cup Cilantro
  • 1 Green chillies optional
  • ½ teaspoon Salt

Egg Mixture

  • 6 Eggs
  • 60 ml Heavy cream
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions
 

Vegetable mix

  • Chop the veggies. Combine vegetables, cheese, and salt to taste.

Egg mix

  • In another bowl, add eggs and heavy cream and whisk well.
  • Stir in salt and black pepper. Mix well.

Filling of muffin tin

  • Grease the tin, or use the parchment paper to line the tin.
  • Fill in the vegetable mix and then pour the egg mixture.

Baking

  • Bake these gluten-free cheesy muffins in a preheated oven at 180°C for 8-10 minutes or until turn slightly golden.
  • Cool them before removing them from the tin.
  • Serve warm delicious, nutrient-packed veggie egg bites with your favorite dip.
