This vegan stir fry veggies recipe is a quick and easy, perfect option when you are in the mood for healthy and light food.

It is a low-carb, low-calorie healthy stir-fry vegetable recipe in which the fresh vegetables are cooked under steam instead of direct heat. We all know that steam is the best cooking method, as it retains all the nutrients and flavor of the food. Therefore, one gets the complete nutrition of all the veggies without compromising taste.

The addition of corn kernels and pineapple makes these veggies more tempting. Corn provides crunchiness, whereas pineapple gives a sweet and sour unique flavor to the veggies that blend so well with the veggies you can't stop eating.

To make rainbow stir-fry vegetable, you need the following items:

Cauliflower: ¼ - each floret cut into 2-3 pieces.

Carrot:1- Peeled and chopped into thin 1-inch long slices.

Bell Peper: 1 red and 1 yellow -cut into thin, long slices.

Corns: 1 cup - frozen corn kernels.

Pineapple: ¼ cup Canned.

Oil: 1 tablespoon.

Salt: 1 tablespoon.

Tomato ketchup: 1 teaspoon (optional).

Soy sauce: 2 teaspoons.

You are free to choose the veggies of your choice.

How to make low-carb stir-fry veggies

Step -1 Cook veggies

  • Chop all the veggies into long thin slices.
  • Steam cauliflower and carrot for 10 minutes or till these are partially cooked.
  • Add red and yellow bell peppers to the steamer and steam them for 5 minutes.
  • Remove from the steamer and allow to cool vegetables.
    • Note; Bell pepper takes very little time to cook, so I add them in the last for 5 minutes only. The total time to steam the veggies is 15 minutes.

Step-2 Stir fry veggeis in the sauce

  • To medium-hot skillet/pan, pour a tablespoon of cooking oil and stir in steamed veggies. Add salt and pepper as per your taste. Saute for 2 minutes.
  • Add frozen corn kernels and saute further for a minute. Stir in pineapple slices. Next goes in tomato ketchup and soy sauce. (images 5-6)

What to serve with stir-fried veggies?

  • Stir-fry fresh veggeis can be enjoyed as such.
  • Make a complete meal with steamed rice or fried rice.
  • These veggies go well with the soup.
  • Serve them with noodles.
  • These veggies taste yummy with potatoes.
  • It also tastes delicious when served with chicken drumsticks.

Leftover advice

I recommend consuming these fresh vegetables stir-fried the same day you prepare them. Anyway, got leftovers? No worries, you may try these options:

  • While making noodles pasta, add these stir fry veggeis veggies in the last. These will taste better than their original version.
  • Blend them and use them as stuffing for a grilled sandwich, or parathas. To enhance the taste, try adding grated mozzarella also.
  • Make scrambled egg veggies by just adding beaten eggs to it. Cook it for 2-3 minutes, and you are ready with one more new recipe.

Tips

  1. Do not overcook veggies. Cook till they do not have a raw bite and still are vibrant.
  2. Chopping veggies into thin slices will reduce the cooking time.
  3. You may substitute pineapple with any other fruit.
  4. Tomato ketchup is optional. Skip it if you don't like its flavor.
  5. Add chopped onions and garlic while stir-frying the veggies.
  6. Serve these fried veggies immediately as they turn soggy soon.

Ingredients
 
 

  • ¼ cauliflower
  • 1 carrot
  • 1 bell pepper red
  • 1 bell pepper yellow
  • 1 cup frozen corn kernels
  • ¼ cup canned pineapple
  • 1 tablespoon oil
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 teaspoon tomato ketchup
  • 2 teaspoon soy sauce

Instructions
 

Chop the Veggies

  • After thorough washing and rinsing, chop the vegetables into long thin slices except for cauliflower.

Steam the veggies

  • Using a steamer, steam cauliflower and carrot for 10 minutes. Add bell peppers and steam for 5 minutes more.
  • After 15 minutes, remove veggies from the steamer and cool them slightly.

Stir Fry Veggies

  • Pour in oil into a pan, add steamed veggies. Add salt and pepper to them.
  • Saute for 2 minutes, stir in corns stir fry and add pineapple slices.
  • Pour in tomato ketchup and soy sauce.
  • Simmer stir fry for 2-3 minutes.
  • Healthy low-calorie stir veggies are ready to serve.
