About the recipe

The eggless apple cake with walnuts is made with heart-friendly walnuts and flavourful fresh golden apples.

A crumb/crumble is the layer of a lovely crumble topping of sugar, butter, and flour that gives a cake extra crunchiness. But in this recipe, a crumb is prepared using walnuts, sugar, butter, and flour, where the caramelization of sugar and walnuts gives this cake a beautiful, golden, crunchy layer. 

This recipe calls for baking a walnut cake with a layer of juicy apples and walnut crumb topping. It has the perfect nutty texture, moist inside with a crunchy walnut crumb top, which is addictive. Though this apple walnut cake recipe is eggless, it is soft, moist, and fluffy inside!!

My experience...

I have abundant apples lying in the fridge as they are in season. I was thinking about using them before they start fermenting. So, I thought of using these lovely fresh apples in this recipe. I prepared a crumble cake for the first time and was a little nervous about the crumble layer. But, I knew somewhere in my mind that this recipe would work. And believe me, this is the best idea to use apples like this.

I was so excited to see the results, as it looked so beautiful with a golden crust on the top. About the aroma, what to say! It was beyond my expectations!! And when I tasted it, I was like, as if I was walking on air as my sixth sense was correct! The cake was too yummy, moist inside with a perfect super crunchy nutty top. Everyone, including my neighbors, liked this cake, and they are after me for the recipe. This cake recipe is on my hit list now, and I will make it again for the festivals.

Undoubtedly, it is a delicious cake that can be served on its own or with ice cream or custard. The aroma and flavor of this cake are so lovely that you don't even require frosting.

Note:

To make this eggless apple crumble cake, you need lots of utensils (mixing bowls) and lots of work later like washing and cleaning, etc., So bear this in mind before starting this recipe. 

Ingredients for apple walnut cake

You need the following items to prepare egg-free walnut apple cake:

  1. Apples - I use fresh golden delicious apples. We need to peel, core, and slice them. You can also use Granny Smith, Gala, Kanzi, etc.,
  2. Butter- I use salted butter as it balances out the sweetness of the cake.
  3. Oil- Any vegetable oil works best for the recipe. Avoid oil with a strong flavor.
  4. Walnuts- I have ground the walnuts in a mortar pestle. You can also grind it in a grinder, but keep it coarse.
  5. Sugar- Any sugar goes well. I use raw cane sugar.
  6. Baking powder
  7. Baking soda
  8. Flour- All-purpose flour
  9. Honey- We need this to coat the apple slices to overcome the apple tartness. Feel free to skip this if you like apples as such.

How to make apple cake eggless?

Step-1 Walnut crumble

Walnut crumble is a mixture of walnuts, butter, sugar, and flour for a crisp, crunchy topping that is the unique quality of this cake.

  • Grind walnuts to coarse using a grinder/mortar pestle. I would suggest you use a mortar pestle, as you have more control over the coarseness of nuts.
  • Combine flour, walnuts, sugar, and butter (room temperature) in a mixing bowl.
  • Mix well with the help of a spoon or spatula and set it aside. (see the image below for how it looks)

Note:

Please do not compromise on the butter as the crumb will be too dry to eat!!

Step-2 Apple slices

  • Peel off the fresh apples cored and cut them into thin slices of uniform size.
  • Try to cut small, thin slices of apples as this makes them bake quickly and evenly.
  • Pour honey over the apple slices and mix well. Avoid this if you like the tartness of apples.
  • Set it aside (images below).

Step-3 Cake Preparation

A- Walnut Cake batter (Images below)

  1. To prepare a walnut cake batter, combine dry ingredients, like flour, baking powder, and baking soda using a sieve.
  2. Add oil, butter, walnuts (ground), and sugar to another bowl and combine well.
  3. Add dry ingredients to wet slowly and gently fold through with a spatula until almost combined (cut and fold technique).
  4. The Walnut cake batter is ready.

Note: Keep the walnut cake batter thick.

B- Filling the cake tin (Images below)

  1. Line a cake tin and overhang it a little extra on both sides to lift the cake later. Pour the batter into the tray. Spread it out to the edges with the help of a spatula and smooth out the top.
  2. Layer apple slices over the batter. Gently tap it with the spatula to make it smooth.
  3. Sprinkle nutty crumble on the top of the apple layer.
  4. Press it down with a spatula to smoothen the crumb layer.

C- Bake the cake

  • Bake it in the oven at 180 °c for 45 minutes.
  • You can remove it from the oven when the crumb layer turns golden or until an inserted skewer comes out clean.

D- Slicing the cake

  • Let the cake cool completely after removing it from the oven.
  • Carefully remove the cake from the tin by holding it from the extra hanging baking paper on the sides of the cake tin.
  • Slice it gently as the cake is too soft inside.
  • It comes out to be 12 square slices.
  • Serve and enjoy eggless apple walnut Crumb cake!!

Serving Suggestions

  • The aroma of apples and the nutty flavor of this cake is such that they can be served with no frosting.
  • You can also serve it warm with ice cream.
  • Pour custard on top of the cake and serve hot!!
  • Serve it with a drizzle of caramel sauce if you don't bother with extra sweetness.

Storage Suggestions

  • Store this walnut apple crumble in the refrigerator.
  • Please do not keep it at room temperature for more than 10-12 hours as the apple starts to ferment quickly.
  • The cake stays fresh for 3-4 days if you keep it in the fridge.

Tips

  1. Use fresh walnuts and fresh apples for the best aroma and flavor of the crumb cake.
  2. Line the cake tin before preparing the cake batter. It will save you time.
  3. The cake will not come out clean and complete if you do not line the tin. So guys, do not skip this!!
  4. Make sure to overhang the parchment paper on both sides so that you can grab the overhang to lift the cake out.
  5. It is a delicate crumble cake so COOl DOWN before removing it from the cake tin.
  6. Grind walnuts with a mortar pestle to have more control over the coarseness of nuts. Remember; the more coarse nuts, the crunchier the cake is.
  7. You can skip the honey coating of apple slices if you are not fond of too much sweetness.
  8. Cut apples just before adding them to the batter; if you are not adding honey to them.
  9. Dice apples into small and uniform sizes as far as possible for perfect baking.
  10. The walnut cake batter should be thick and dense; otherwise, the juice released from the apple slices during baking will loosen the cake and make it more fluid.
  11. Add cinnamon, and nutmeg to the cake batter for spicy flavor.
  12. Always store apple walnut crumble cake in the fridge.

Walnut crumb

  • ½ cup all-purpose flour 90 g
  • ½ cup walnuts 60 g
  • ½ cup butter salted 60 g
  • ¼ cup sugar 50 g

Apple slices

  • 2 golden delicious apples
  • 1 tablespoon honey

Sponge

  • 1 cup flour 180 g
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup sugar 100 g
  • ½ cup oil 95 g
  • 2 tablespoon butter
  • ¼ cup walnuts 30 g

Instructions
 

Walnut Crumble

  • Combine butter, sugar, flour and ground walnuts in a bowl and mix well.
  • Set aside.

Apple slices

  • Peel, dice and chop apple into thin, small size slices.
  • Coat apple slices with honey and set aside.

Cake batter

  • Combine flour, baking powder, and baking soda in a bowl.
  • Add butter, oil, sugar, walnuts into another bowl and whisk well.
  • Mix dry ingredients into wet ingredients while folding the batter.

Pouring batter technique

  • Line a cake tin. Pour the walnut cake batter into it and spread evenly with a spatula.
  • Spread apple slices over the cake batter and smoothen the top with a spatula.
  • Sprinkle walnut crumble over the apple layer and press it gently with the help of a spatula for the even top.
  • Bake it in the oven at 180°C for 45 minutes.
  • Remove it from the oven when the crumb layer turns golden or until an inserted skewer comes out clean.
  • Cooldown before slicing.
  • Slice it. Serve and enjoy eggless apple and walnut crumble!!

      I just tried the cake today.. Honestly i was a bit reluctant at first but had to use the apples somehow.. and I am so glad I tried it.. It came out amazing.. The crumble on top is better than any icing and it balances everything so well. Thank you for the great recipe.. ❤️
