📋Ingredients

To make these egg-free pistachio cookies, you need the following items:

Labelled ingredients for pista cookies

Pistachios - The hero ingredient! Adds a lovely nutty flavour, colour, and crunch throughout the cookies. Use unsalted, shelled pistachios for the best taste. Reserve extra pistachios for garnish.

If nutty crunch is your thing, you’ll also love my nutty crunchy salad, mangonut slice, and roasted black chickpea balls.

Butter - Softened salted butter. Adds richness, flavour, and that classic melt-in-the-mouth texture. Using salted butter also means you can skip adding extra salt to the dough.

Cornflour/corn starch - Softens the cookie texture and reduces gluten formation. This gives the cookies their signature crumbly, shortbread-like bite.

Cardamom - A warm, aromatic spice that complements pistachios beautifully. It gives these cookies an Indian festive flavour.

Just like in my homemade 4-ingredient chai masala, cardamom plays a key role in enhancing flavour, making these cookies smell and taste irresistibly festive!

👩‍🍳How to make air fryer pistachio cookies

In a bowl, beat the softened butter and sugar until light and fluffy. Mix in flour, cornstarch, milk, and cardamom powder. Combine to form a soft dough.

If the dough feels dry, add a tablespoon of milk to bring it together. Fold in chopped pistachios evenly and knead into a soft dough. Refrigerate the pistachio cookie dough for at least 30 minutes.

Shape the dough into a large circular disc and gently flatten it. Cut your favorite cookie shapes using a cookie cutter and top with finely chopped pistachios.

Arrange the cookies with some space in between on the lined tray with parchment paper or a silicone mat. Refrigerate the shaped cookies for 15–20 minutes to help them hold their shape while air frying.

Preheat the air fryer to 160°C (320°F) for 2 minutes. Air fry for 10–12 minutes, until the pistachio cookies are lightly golden at the edges.
Let them rest in the basket for 5 minutes before transferring to a cooling rack. Pistachios cookies’ll crisp up as they cool.

❄️Storage

Store these eggless pista cookies in an airtight container at room temperature for up to several days. They actually taste better the next day as flavours settle.

ℹ️FAQ

Can I make these pista cookies without an air fryer?

Yes! You can bake them in a preheated oven at 170°C (340°F) for 15–18 minutes, or until the edges turn lightly golden.

Can I use salted pistachios?


Avoid salted pistachios as they can alter the flavour. If that’s all you have, rinse and pat them dry before chopping

Why do my cookies turn hard?


They may have been over-fried, or the dough may have been too dry. Add 1–2 teaspoons of milk next time to soften the dough and reduce air-frying time slightly.

Can I skip cornflour?

Cornflour gives the cookies their soft, melt-in-mouth texture. If you skip it, the cookies will be slightly firmer. You can substitute with rice flour or custard powder.

  • If the dough turns sticky, just add a small amount of flour to bring it back together.

  • 125 g All-purpose flour
  • 115 g Butter salted
  • 60 g Sugar
  • 30 g Finely chopped pistachios (unsalted)
  • 2 tablespoon Cornflour
  • 2-3 tablespoon Milk
  • 1 teaspoon Cardamom powder

  • Cut the cookies into your desired shapes with cookie cutters, then sprinkle the tops with finely chopped pistachios.
  • Place them on the lined tray with parchment paper or a silicone mat.
  • Refrigerate the shaped cookies for 15–20 minutes to help them hold shape while baking.
  • Preheat the air fryer to 160°C (320°F) for 2 minutes.
  • Air fry for 10–12 minutes, until the pistachio cookies are lightly golden at the edges.
