To make these egg-free pistachio cookies, you need the following items:

Pistachios - The hero ingredient! Adds a lovely nutty flavour, colour, and crunch throughout the cookies. Use unsalted, shelled pistachios for the best taste. Reserve extra pistachios for garnish.

Butter - Softened salted butter. Adds richness, flavour, and that classic melt-in-the-mouth texture. Using salted butter also means you can skip adding extra salt to the dough.
Cornflour/corn starch - Softens the cookie texture and reduces gluten formation. This gives the cookies their signature crumbly, shortbread-like bite.
Cardamom - A warm, aromatic spice that complements pistachios beautifully. It gives these cookies an Indian festive flavour.

👩🍳How to make air fryer pistachio cookies
In a bowl, beat the softened butter and sugar until light and fluffy. Mix in flour, cornstarch, milk, and cardamom powder. Combine to form a soft dough.

If the dough feels dry, add a tablespoon of milk to bring it together. Fold in chopped pistachios evenly and knead into a soft dough. Refrigerate the pistachio cookie dough for at least 30 minutes.

Shape the dough into a large circular disc and gently flatten it. Cut your favorite cookie shapes using a cookie cutter and top with finely chopped pistachios.

Arrange the cookies with some space in between on the lined tray with parchment paper or a silicone mat. Refrigerate the shaped cookies for 15–20 minutes to help them hold their shape while air frying.
Preheat the air fryer to 160°C (320°F) for 2 minutes. Air fry for 10–12 minutes, until the pistachio cookies are lightly golden at the edges.
Let them rest in the basket for 5 minutes before transferring to a cooling rack. Pistachios cookies’ll crisp up as they cool.
