Prepare the dough
In a bowl, beat the butter until light and fluffy. Add powdered sugar, egg, and orange juice, and whisk until well combined. Gradually fold in the dry ingredients, including the fresh orange zest.

Mix with a spatula and knead into a soft dough, using your hands. Cover the dough with a cellophane layer and chill it for 20 minutes.

To shape these delightful rectangle orange-zest cookies, I use two distinct cutting methods, each offering its own charm and texture. Feel free to choose the method that suits you the best.
1️⃣ Roll & cut from circular dough
In this technique, roll the dough into a big circular disc. Then cut out a large rectangle and portion it into evenly sized smaller rectangles using a sharp knife.

Cut the cookie dough into small rectangles by slicing horizontally and then vertically.
I prefer this method because it gives consistently sized cookies with clean edges, making them ideal for gifting or presentation. The only downside is that you need to keep rolling the dough until all the cookies are made.
2️⃣Block Method
Once the dough has chilled and firmed up, wrap it tightly in plastic wrap and shape it into a smooth, elongated rectangular block using gentle pressure from your hands. Slice the log into evenly sized rectangular pieces.

Wrap the dough in plastic wrap and then flatten it.

Cut it into equal-sized cookies using a sharp knife.
This method is quick, efficient, and perfect for preparing a large batch of orange cookies with a uniform shape and size.
Chill the cookies
Arrange the orange zest cookies on a lined air fryer tray, leaving enough space for them to spread. Sprinkle a little extra zest on top, then chill the tray in the refrigerator for 10–15 minutes before air frying.

Air fry in the preheated air fryer at 160°C for 8–10 minutes, or until the edges and underside of the cookies begin to turn lightly golden.
Switch off the air fryer and leave the cookies inside for another 2–5 minutes, then transfer them to a cooling rack to cool completely.
